Origins

The vineyards is located in Mango village, at “Bricco Avene” Hill.


Type of soil

Mixed sub-alkaline, with sufficient concentration of organic matter.

Harvesting time

End of August - beginning of September.


Vinification

The grapes are picked by hand in small boxes and immediately transferred to the cellar to be soft pressed. After a cold processing in steel tanks from 10 to 15 days with carefully controlled temperature, the must is then clarified. Subsequently, it starts the alcoholic fermentation, in autoclave, with production of carbon dioxide. At 5% of alcohol, we rapidly reduce the temperature to stop the fermentation, and we make a filtration. The natural CO2 produced, it remains dissolved into the wine, giving it the characteristic feeling of sparkling, with a residual natural sugar of about 140 g/l.

Ageing

The wine remain into steel tanks for 1 month.

Bottling

It normally takes place at the end of November. In December is already on the market..

Color

Straw-yellow of varying intensity depending on the vintage, intense.


Nose

Intensely fruit nose which is aromatic and very persistent.

Palate

The sweet flavor is beautifully balanced with the low alcohol and the acidity, which though never high, gives it an appealing freshness.


Degrees

5 % with 140 g/l of natural residual sugar.

Food Pairings

A perfect dessert wine to end the meal with a joyful note or with the nougat produced by Sebaste Family.
