After the green harvest doing in the summer, grapes are manually harvested in 25 kg perforated boxes. After a further hand- selected made on vibrating table, the grape is soft press. The contact with the skins lasts 6-8 days in steel tanks thermoregulated with an automatic system of pumping over and fulling.
After the racking follows the malolactic fermentation. Aging for at least 4-6 months in steel tanks.
