Mid/End of September slightly overripe.
After the green harvest doing in the summer, grapes are manually harvested in 25 kg perforated boxes. After a further hand- selected made on vibrating table, the grape is soft press. The contact with the skins continues for 6-8 days in steel tanks thermoregulated with an automatic system of pumping over and fulling.
After the racking, follow the malolactic fermentation. The wine refines in stainless steel tanks for 6-8 months.
