After the green harvest doing in the summer, grapes are manually harvested in 25 kg perforated boxes. After a further hand- selected made on vibrating table, the grape is soft press, after fermentation 4-6 days in steel tanks thermoregulated with an automatic system of pumping over and fulling, to enhance the fruit typical of the variety.
After the racking follow the malolactic fermentation. The wine is aged in stainless steel tanks with micro oxygenation for 4-6 months.
In the Spring following the harvest, it refines at least 1 month before the release on the market.
