After the green harvest doing in the summer, grapes are manually harvested in 25 kg perforated boxes. After a further hand- selected made on vibrating table, the grape is soft press, after fermentation with daily pumping over. The maceration lasts 3-4 days racking of the product still very sweet that ends the fermentation at low temperature.
The wine remains for few months in steel tanks.
Towards the month of May the second fermentation takes place in autoclave, where a second fermentation takes place which gives it a very fine sparklingness.
