Origins

The vineyards are located in Mango village, Bricco Avene e Schiasso at a height of about 500 mt above sea level.


Type of soil

Medium textured with sub-alkaline reaction, with sufficient supply of organic matter.

Harvesting time

Middle of September


Vinification

After the green harvest doing in the summer, grapes are harvested manually in 25 kg perforated boxes. The grape is kept in a cold room for a couple of days and further selected on a special vibrating table before being submitted to a soft press. After cold decanting from 10 to 15gg in steel tanks under controlled temperature, the must obtained is clarified. Later start the transformation of the sugar present in the must in alcohol and carbon dioxide. Upon the achievement of 5% of alcohol we lower the temperature so as to stop the fermentation. During this the carbon dioxide naturally produced remains dissolved in the wine, giving it the natural freshness characteristic of Moscato d’Asti which also has a residual natural sugar of about 140 g/l.

Ageing

The wine remain into steel tanks for about 1 month.

At the end of November is already in the bottle

Palate

The sweet flavor is beautifully balanced with the low alcohol and the acidity that is never very high and gives it a pleasant freshness.
